I can't speak for musescore either, but I've had that happen to me even in Finale with the Garritan sounds. I'm pretty sure it isn't as severe an issue for me as it is in your program, but in any case I haven't figured out what the problem is either. I know it might not be the ideal option, but while your through-composing you might consider using string section (or even solo strings) sounds instead, if you have them. It isn't quite the same but it's a little better than the kerplunkety piano chords if you're trying to get a better idea of the harmonies and how they sound.
