Presumably because Spanish DOES have gendered nouns, and the -x is an attempt to get everyone included under the umbrella. When I was in school certain teachers forbid us from using gender neutral terms in writing assignments and would mark points off if you put a "he or she" or something similar in a paper. All people were male in their days and women hadn't been invented yet. But you are right. Latinx is a pretty new term, and for the most part the only people who use it are white, and the people they are referring to prefer to call themselves Hispanic.
